Vendakkai Puli Kootu




























Ingredients:
20 Lady's Finger (washed, dried and Cut into 1 inch pieces)
3 cloves of Garlic (peeled and chopped)
1 Onion (chopped)
3 strands of curry leaves
2 Tomato (chopped)
3 Green chillies (cut into 1/2)
1 small lime size tamarind ball
1/4 tsp Fenugreek seed
1/4 tsp Mustard seed
1/4 tsp Turmeric powder
1 tbsp Sambar powder
1 tbsp Coriander powder
2 tbsp coconut milk
2 tbsp Gingerly oil
Salt to taste

Method:
  • Heat 1 tbsp oil in a pan and saute the lady's fingers till half cooked. Keep aside.
  • Soak the tamarind in a cup of water for 10 mins and strain the water.
  • Heat the remaining oil in a wok and add the fenugreek, mustard, garlic, onion, curry leaves and chillies. Stir fry for 2 mins.
  • Then add the tomatoes and the turmeric, sambar and coriander powders. Fry till the oil separates from the masala. Keep on low flame.
  • Now add the Lady's finger and salt. Fry for few minutes. Add the strained tamarind water and cover the pan.
  • When the lady's finger is fully cooked, add the coconut milk and cook for 5 more mins on low flame.
  • Serve the tasty tangy vendakkai puli kootu with plain rice, dhal and pappadam.
