Long Beans Bacon Stirfry



























Ingredients:
15 Long beans (Cut into 1" inch thick)
3 streaks of bacon
5 cloves of garlic (peeled and crushed)
1 Onion (chopped)
4 Red chillies (Slit)
1 tomato (chopped)
3 strands of Curry leaves
1/2 seasoning chicken cube
1/4 tsp Turmeric Powder
3 tbsp freshly grated coconut
2 tsp oil
salt to taste

Method:
  • Heat a non stick pan, fry the bacon streaks till crispy. Remove from pan, crumble it to small pieces and keep aside.
  • Heat 1 tsp oil in a wok, fry the curry leaves till crispy, remove and keep aside. Fry the grated coconut in the same pan under low flame till it is browned and fragrant.
  • Heat the remaining oil in a separate pan, add the onion, chillies and garlic. Fry for 2 mins.
  • Then add the long beans, tomatoes, seasoning cube, turmeric powder and salt with few tablespoons of water. Cover the wok and cook till long beans are tender.
  • Then add the fried bacon bits, coconut and curry leaves and stir fry for another 3 more mins.
  • Switch off the stove and serve hot.
