Ingredients:
2 Potatoes
1/2 cup Methi leaves
1 small onion (Finely chopped)
1 inch Ginger (Finely chopped)
1/4 tsp Fennel seeds
1/4 tsp Cumin seeds
A pinch of hing
A pinch of Garam masala
1/4 tsp Turmeric powder
1/2 tsp Chilli powder
1/4 tsp Coriander powder
1 tsp oil
salt to taste
Method:
- Boil potatoes in salt water, peel the skin and cube it.
- In a bowl, add 1 tsp salt,1 tsp sugar, methi leaves with a cup of water. leave for 5 mins. Then squeeze out the methi leaves and keep aside.
- Heat oil in a wok, add the cumin and fennel seeds, onion, and ginger. Fry for 2 mins.
- Then add the Methi leaves, hing, turmeric, chilli, coriander powder and salt with few tablespoons of water. Cover the wok and cook for 5 mins.
- Then add the potatoes and garam masala. Stir well to combine everything.
- Switch of the stove and serve it hot with Roti.
